Passersby might notice the former Long John Silvers on Jefferson City's Missouri Boulevard looks a little different as it transitions to Pancho's Mexican Food. The formerly blue and yellow restaurant is now a stark red and white as its new tenants prepare to bring the new franchise to town. "Feel the joy of new flavors of Mexican cuisine with your new local family restaurant and the most authentic, delicious Mexican food all around," the business advertised online. While there's no released opening date so far, the company stated in an announcement it will offer traditional authentic Mexican fast food, including tacos, quesadillas and burritos.
